Easy weeknight dinner. Season and sear the chicken, then let the cooker do the rest: peppers, onions, tomatoes, and stock on low for 4 to 6 hours. Serve it over rice.

Ingredients

  • Chicken thighs or breasts
  • 1 large onion, sliced
  • 2 bell peppers, sliced
  • Garlic, to your liking
  • Kinder’s SPG and Roast Chicken seasonings
  • Olive oil or avocado oil
  • 2 (15 oz) cans diced tomatoes
  • Tomato paste
  • 32 oz chicken broth or stock
  • Italian seasoning, added at the end
  • Butter and flour slurry, to thicken (optional)

Steps

  1. Season the chicken with Kinder’s SPG and Roast Chicken. Sear in oil on each side until golden brown. Set on a plate.
  2. Add the onions, peppers, and garlic to the cooker, then put the chicken back in.
  3. Top with the diced tomatoes, tomato paste, and chicken stock.
  4. Cook on low 4 to 6 hours, until the chicken is done.
  5. Optional: stir in Italian seasoning and a butter and flour slurry at the end to thicken.
  6. Serve over rice.

Linewife notes

  • Thighs or breasts: Use what you have. Sear first so it actually tastes like dinner, not boiled chicken.
  • Low and slow: 4 to 6 hours in the cooker. Don’t rush it.
  • Stock from the freezer: Homemade stock works here too. Homemade chicken stock recipe →
